During a ceremony held in Milan in June, Irish chef Mark Moriarty was named the most talented young chef in the world, with the 23-year-old winning the prestigious title of the San Pellegrino Young Chef 2015. He said that he feels extremely proud to have won a competition of this size and this calibre, where he represented Ireland and the UK.
The culinary expert won the competition for his signature dish. He prepared celeriac baked in barley and fermented hay with cured and smoked celeriac. He had to prepare the dish for a total of seven judges and 300 tasters. Mark said that with his signature dish, he wanted to capture the essence of Ireland and present humble, locally sourced ingredients like celeriac and barley in a unique way. He added that Ireland has a lot of potential to be a food destination, and he would like to think that he can play a part in bringing innovation and excitement to the Irish food scene as he progresses in his career.
